Abstract
The effects of selected concentrations of calcium and magnesium on some of the phytochemicals in Arthrospira platensis MGH-1 were investigated. In order to produce A. platensis MGH-1 enriched with calcium and magnesium, the correct concentrations for each element were selected based on growth parameters and accumulation of these metals. Maximum soluble sugar, soluble protein, carotenoid, phenolic compound, and palmitic acid content were seen at 0.1 g L−1 calcium. The highest activity of catalase enzyme, chlorophyll a content, and the content of γ-linolenic acid and palmitoleic acid were detected at 1.2 g L−1 magnesium treatment. The results of the present study showed that 0.1 g L−1 of calcium and 1.2 g L−1 of magnesium are suitable element concentrations for the enrichment of A. platensis MGH-1 to develop antioxidant food rich in bioactive compounds for human health.
