Determination of histamine levels in canned tuna fish marketed in Mazandaran province, Iran

Abstract
The objective of this study was to determine the presence and contents of histamine in canned tuna fish produced by different plants in Iran. A total of 90 canned tuna samples were obtained randomly from May 2018 until April of 2019 from supermarkets of different cities (Behshahr, Sari, Ghaemshahr, Babol, Babolsar, Amol, Mahmudabad, Nowshahr, Chalus, Ramsar) of Mazandaran province, and ELISA was applied to detect the presence and levels of histamine. The incidence of histamine in the 90 samples of canned tuna fish in the supermarkets was very low and not-detected (ND). The samples which contained detected amounts of histamine had values ranging from 0.4 to 19.10 mg/kg. The overall mean levels of histamine in tuna fish from the supermarkets were 5.37 mg/kg. The levels of histamine in the samples analyzed were in compliance with the legislations from Iran (50 mg/kg) and USFDA (United States Food and Drug Administration) (20 mg/kg).
